(I stand corrected. One more broken-hearted love song by Taylor Swift may take the cake in most annoying things ever. We get it, Taylor. We get it.)
BUT, excellent news: my hand is basically back to normal! Wooooo hooooo for writing and buttoning my own pants and washing my hair with both of my hands and stirring things and so many other wonderful activities that require two hands!!! I can't snap my fingers yet. So obviously that's really weighing on me heavily, as I LOVE to snap, but all in due time.
Moving on....... I've really been into baking for a while now. I'll be the first to say I'm not that good....yet. I'm getting there. I do love it though! There's just such a wonderful sense of accomplishment when you pull perfectly looking cupcakes out of the oven!! Although, I have yet to feel that sense of accomplishment associated with the cupcakes. They're a work in progress.
I also LOVE looking for healthy alternatives to yummy baked goods, which leads me to my most recent find. Healthy Oatmeal Cookies!!
I know what you're thinking, realllllly? making an already healthy-ish cookie even healthier?! BLAH?! Well, get over it! There are tons of oatmeal cookie recipes out there that truly aren't that healthy for you!!
What I love about this recipe that I found is that you don't use ANY white sugar, butter, milk or eggs! Although, you DO use an egg white. Also, three days later when I pulled a cookie out of the bag, they were still super soft and moist!!! I feel confident that there are very few cookies that can achieve such a thing!!
I just love to bake, guys. So bake I shall!!!
